Using Hops for Homebrewing


Bullion (Bittering)

This is a good bittering hop, used mainly for stouts and dark ales. The aroma is intense, spicy and pungent. Substitutions include Northern Brewer and Galena.

Cascade (Finishing)

Good for flavor and aroma, but an acceptable bittering hop also. Aroma is flowery and spicy, a bit citrus-like. Good for ales and lagers. Substitutions include Centennial.

Centennial (Bittering)

Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales. Substitutions include Cascade.

Challenger (All Purpose)

Popular bittering hop used primarily in British ales and lagers. Mild to moderate aroma, but quite spicy.

Chinook (Bittering)

Very strong bittering ability used in all American ales and lagers. Aroma is very floral. Substitutions include Galena, Cluster and Nugget.

Cluster (All Purpose)

Used for bittering and flavor qualities in light and dark American lagers. Aroma is very floral. Some substitutions include Galena and Chinook.

Columbus (All Purpose)

Used mainly for bittering with some flavor qualities as well. Aroma is pleasant.

Crystal (Finishing)

Used mainly for its aroma which is mild and pleasant. Some substitutions include Liberty, Mt. Hood and German Hallertau..

Eroica (All Purpose)

Mainly used for bittering and good aroma for pale ales and dark ales, and also stouts. The aroma is quite strong but not unpleasant. Some substitutions include Chinook, Cluster, Galena, and Nugget.

Fuggles (Finishing)

Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft. Substitutions include Willamette, East Kent Goldings, Styrian Goldings.

Galena (Bittering)

This hop can be very bitter, but blends well with finishing hops. Used in American ales and lagers, but suitable for all beer styles. Aroma is medium but pleasant. Substitutions include Nugget, Cluster, and Chinook.

Hallertau (Finishing)

Good for all around bittering and finishing stock ales, Belgian ales, and continental style lagers. Aroma is mild, pleasant and flowery.

Kent Goldings (Finishing)

Used in classic English ales, kettle hopping, dry hopping pale ales, bitters, porters, and stouts. Aroma is gentle, fragrant and pleasant. Substitutions include Fuggles and Willamette.

Liberty (Finishing)

Used mainly for finishing German and American style ales and lagers. Aroma is mild and pleasant. Substitutes include Hallertau, Mt. Hood, and Crystal.

Mount Hood (Finishing)

Used mainly for aroma and flavor in American and German style ales and lagers. Aroma is mild, pleasant, light, and clean. Substitutions include Hallertau, Liberty, and Crystal

Northern Brewer (All Purpose)

Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones. Substitutions include Galena and Perle.

Nugget (All Purpose)

This is very bitter and often used in medium to dark ales and lagers. Aroma is quite heavy and herbal. Substitution include Chinook, Galena, and Cluster.

Perle (All Purpose)

Used mainly for its minty bittering and good green hop aromas in all non-pilsener lagersand wheats. Aroma is pleasant and slightly spicy. Substitutions include Northern Brewer, Cluster, and Galena.

Saaz-USA (Finishing)

Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones. Substitutions include Czech Saaz.

Saaz-Czech (Finishing) 

Used for finishing Bohemian style beers, continental lagers, wheats, and pilseners. Aroma is very mild with pleasant hoppy notes. Substitutions include Tettnang, and USA Saaz.

Target (All Purpose)

Used for its robust bittering ability in British ales and lagers. Aroma is quite intense. Substitutions include Kent Goldings.

Tettnang (Finishing)

Mainly used for finishing wheats and lagers. Aroma is very spicy, mild, floral, and very aromatic. Substitutions include Saaz.

Willamette (Finishing)

This hop is used for finishing and dry hopping American and British style ales. Aroma is mild and pleasant ans slightly spicy. Substitutions include Fuggles and Kent Goldings.
